Today I'm sharing one of my favorite recipes that I made for dinner last night. This recipe has been a family favorite since I was little and was one of the first meals I made for Scott when we got married. I love this meatball recipe because it's super easy and really versatile. You can make them healthier if you want by making them with ground turkey and brown rice (like I did last night). You can also serve these meatballs as a main dish or over pasta for leftovers. Try these meatballs for dinner tonight; you're whole family will love them!
Porcupine Meatballs
Ingredients:
Meatballs
1/2 cup uncooked long grain rice (or brown rice)
1/2 cup water
1/3 cup chopped onion
1 tsp salt
1/2 tsp celery salt
1/8 tsp pepper
1/8 tsp garlic powder
1 lb. ground turkey or beef
2 Tbs cooking oil
Sauce
1 (15 oz) can tomato sauce
1 cup water
2 Tbs brown sugar
2 tsp worcestershire sauce
Directions:
1. In a bowl, combine first 7 ingredients. Add meat and mix well.
2. Shape mixture into 1 1/2 inch balls. In a large skillet, brown meatballs in oil. Drain.
3. Combine sauce ingredients in a large bowl. Pour over meatballs until they are covered.
4. Cover and simmer for 1 hour (add 20-30 minutes to time if using brown rice)
*I like to serve mine as a main dish with roasted vegetables, salad and mashed potatoes. You can also serve with rice, quinoa, or over pasta.
Oh my gosh, my mom used to make these all the time! I'd completely forgotten about them until seeing your post. Hmmmm, I might have to make these soon :)

DeleteYum! I'm a huge fan of meatballs, especially because of how versatile they are. These sound delicious! Whenever I make mine, I usually roll them into little balls and bake in a mini muffin pan that way they keep their shape. Yours turned out awesome though!

ReplyDeleteYeah, it seems a little strange but they turn out so good! The sauce you pour on them cooks the rice and it makes them really filling.
