Gluten Free Pumpkin Spice Waffles

I've never been much of a breakfast person in the mornings (usually I'll just eat some yogurt or a protein bar) but I LOVE breakfast for dinner.  I had a craving for breakfast for dinner this weekend and really wanted waffles. I had an extra can of pumpkin in the pantry and decided to experiment with a new recipe.  The result were these mouth-watering pumpkin spice waffles.  They have just the right amount of pumpkin flavor and spice but they don't overwhelm you with too much pumpkin.  The pumpkin also adds the perfect texture to the waffles so that they don't taste grainy like many gluten free products do.  Scott, who doesn't like pumpkin or eat gluten free, really loved these and told me he couldn't even tell they were gluten free. 
Not a waffle fan?  This batter can also be used for pancakes (I used the batter for pancakes on Saturday night and again for waffles on Sunday night.  It was a carb-loaded weekend in my house).  Try this recipe for breakfast, dinner, or both.  



Gluten Free Pumpkin Spice Waffles

Ingredients:

2 1/4 cup Bob's Red Mill Gluten Free Pancake Mix
1 tsp cinnamon
2 1/2 tsp pumpkin spice
2 eggs
1 1/2 Tbsp oil
1 1/2 cup milk, almond milk, or soy milk (I used unsweetened almond milk)
1 1/2 cup canned pumpkin (almost a full 15 oz can)
2 tsp sugar (or honey/agave nectar if you're avoiding refined sugar) 

Directions:
1.  Mix together the dry ingredients in a medium size bowl.  Set aside.
2.  In a separate bowl, whisk the eggs, oil and milk (and honey/agave if using).  
3.  Add the wet ingredients to dry and combine.
4.   Add the pumpkin to the mix and combine.  
5.  Cook in a waffle iron or griddle (for pancakes) and enjoy!  

Tips:
*Batter should be a little on the thick side but if it's too thick you can add a little more milk

*I usually don't like a lot of syrup because it adds SO much sugar and carbs to your already carb-filled waffles.  I like to eat mine with a little greek yogurt for flavor and added protein.  These waffles are great topped with a little pumpkin greek yogurt.

  3. I don't own a waffle maker but these look delicious!! I am a huge fan of breakfast for dinner or brinner ;) Especially anything with eggs!

    1. Oh me too. I could always go for a big omelet for breakfast or dinner. You can try making these as pancakes too if you don't have a waffle maker. :)

  4. These look delicious, and will be the perfect recipe to use once my new waffle maker comes in the mail. I'm a huge lover of breakfast for dinner. If it were up to me, I could eat breakfast for 5 out of my six meals :)
