Cilantro Lime Rice

Rice is a staple in my house and is my go-to gluten free side dish that everyone will eat.  Plain rice gets boring though, so I love to mix it up with different types of rice dishes.  This cilantro lime rice recipe is my favorite to serve with any Mexican style dish.  I especially love it as a side with Chile Verde Chicken Enchiladas or honey lime shrimp.  


Cilantro Lime Rice

Ingredients:
2 Tbsp butter
pepper to taste
2 cups jasmine or white rice (I like jasmine for this recipe but either works)
juice of 1 large or 2 small limes
2 1/4 cup chicken broth
3/4 tsp salt
1/4 tsp cumin
2 Tbsp chopped cilantro
Instructions:
In a large skillet, melt butter and sauté with rice for 2 minutes.  Add chicken broth and the rest of the ingredients except the cilantro.  Bring to a boil, reduce heat, cover and cook for 20 minutes or until liquid is absorbed.  Add cilantro during the last 5 minutes of cooking so that it doesn't get too mushy.  

*I love this recipe because you can easily change it to your taste.  I will add a little more cumin or a little less lime each time and it still turns out great.  Play with this recipe and see what works best for you and your family.
