Honey Lime Shrimp with Garlic Snap Peas (PF Changs copycat recipe)

I found this recipe on Pinterest a few weeks ago and decided to try it out.  I was a little hesitant at first because I've tried similar marinades on chicken before and haven't always liked them.  This shrimp surprised me though.  It was really good and SO easy to make!  It was sweet and tangy but had just enough kick.  I really love this recipe too because it's so versatile.  It would be great on the grill or cold in a salad the next day.  When I posted pictures of the finished product on Instagram lots of people wanted to know the recipe.  I finally got around to posting it, along with my favorite copycat PF Changs garlic snap peas recipe.  Hope you guys enjoy! 


Honey Lime Shrimp
Serves 2

Ingredients:
1/2 pound shrimp
1/4 cup olive oil
2 Tbsp honey
Juice of 1 small lime
2 cloves chopped garlic
1/2 tsp salt
1/4 tsp pepper
1/4 tsp red pepper flakes

Directions:
1.  Combine all marinade ingredients in a large ziploc bag, mix well
2.  Add shrimp to bag and place in fridge
3.  Let the shrimp marinate for about an hour (make sure you flip the bag around a few times to make sure all the shrimp gets coated with the marinade)
4.  When you're ready to cook, take the shrimp out of the fridge and let them sit at room temp. for about ten minutes.  Heat a large skillet on medium heat (you won't need any extra butter or oil because there's already enough in the recipe).  
5.  Add your shrimp to the pan in a single layer.  Let them cook on one side until they start to turn pink.  Flip them over and let them cook for another few minutes until the shrimp are opaque.  Remove from pan and serve immediately.  
I served mine over jasmine rice, with a side of garlic snap peas (recipe below) 


Easy Garlic Snap Peas
Serves 2-4
Ingredients:
2 cups fresh snap peas (You can use fresh ones but I usually try to make it easier by buying the pre-packaged bag in the produce section)
2 tsp vegetable oil
1/8 tsp salt
dash of pepper
2 cloves minced garlic

Directions:
1.  Preheat oil in wok or medium skillet on medium heat.
2.  Saute the peas in oil with salt and pepper for 3-5 minutes, tossing often.  Once the peas are cooked but still slightly crispy and the color has changed to a brighter green they are almost ready.  At this point, add the garlic and toss for about 10 seconds (you don't want to leave the garlic in the hot pan for too long because it could burn or get bitter).  Remove immediately and serve.
