Gluten Free Peanut Butter Chocolate Chip Cookies

I know that this time of year most people are looking for healthy recipes to help with their resolutions but I couldn't resist sharing one last delicious cookie recipe this year.  This is my all time favorite gluten free cookie recipe I've ever made.  These cookies have my favorite combination of chocolate AND peanut butter (doesn't get much better than that!).  They have the perfect texture and don't taste gluten free at all.  I made 3 dozen of them yesterday and had to give them away because I couldn't stop eating them; they are so good.  Try these cookies for your New Years Eve party this year.  Trust me, no one will know they're gluten free.



Gluten Free Peanut Butter Chocolate Chip Cookies

Ingredients:
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar or 1/4 cup honey
1/2 tsp baking soda
1/2 tsp baking powder
1 egg
1/2 tsp vanilla
1 1/4 cup gluten free all purpose flour (I used Bob's Red Mill for this recipe but you can use any kind)
1/4 tsp Xanthan Gum
1/2-1 Tbsp milk
1/2- 1 cup chocolate chips (depending on how chocolatey you want them)

Directions:
1.  In large mixing bowl combine all of the ingredients except for milk and chocolate chips.  Mix thoroughly.  Add enough milk until the dough is smooth and creamy.  Add chocolate chips and mix in.
2. Preheat oven to 375 degrees F.  Form dough into small balls and drop onto cookie sheet.
3.  Bake for 7-9 minutes and transfer onto a wire rack to cool.
Yields 3 dozen cookies

  1. Yum! PB&Choc is def. up there with favorite flavor combinations. I also love marshmallow and chocolate and caramel and chocolate!

    I never got around to it during the holidays, but I wanted to make peanut butter cookies with toffee bits. May just make them for the hell of it now! :)

  3. OK this is the third time I've come across chocolate chip cookie recipes in the last couple minutes. Is someone trying to tell me something! I'm dying over here wanting one so bad! :)

  5. These look so good (then again who doesn't love the choc pb combo?). I especially love the larger chocolate chips--I mean the more chocolate the better if you ask me!

    1. Thanks Erin! I love them too. I always use Ghirardelli chocolate chips in my cookies and they make them so much better. :)

  7. Pb + chocolate is one of my favorite combos! And these cookies look utterly awesome, I wouldn't say they're gluten free at all. I mean, the texture seems wonderful! ^^ Happy New Year Christie! x
